Sweet coloring and dress-up app. Not a lot of bells and whistles but nicely designed.

Smart Fish: Magic Matrix HD for iPad on the iTunes App Store
Interactive app with pattern and color matching challenges. I have seen lots of apps like this, but this one is implemented nicely.
House that Jack built - multilingual interactive book for iPad on the iTunes App Store
A simple story with lovely hand drawn sketches. You can listen to the story in many languages.
