Blueberry Muffins come after Blueberry picking!

by Rashi on August 8, 2010

Yesterday, we went berry picking with kids and ended up getting a bag full of blueberries. So, I thought I would make something with blueberries and what else could have been better than “Yummy Blueberry Muffins”.

What you’ll need:

2 cups of All Purpose flour,

1/2 cup sugar, 3 tea spoon baking powder

1/2 tea spoon salt

3/4 cup milk

1/3 cup oil

2 eggs beaten

1/2 cup chocolate chips

1 cup blueberries

1 tea spoon vanilla extract.

How to Make:

1. In a medium bowl, combine the dry ingredients – flour, sugar, baking powder, salt, blueberries & chocolate chips and mix well. And in a separate small bowl, combine the liquid ingredients – milk, oil, egg, and vanilla extract and blend well.

2. Combine dry ingredients with Liquid ingredients using a hand mixer. Batter will remain lumpy.

3. Lightly grease bottom or line with paper baking cups. Pour the batter into the baking cups.

4. Heat oven to 400 degrees F  & bake it for 20 to 25 minutes or until a tooth pick inserted in the center comes out clean.

5  Cool it for 5 minutes before removing from pan and they are ready to be served.

Cooking is such a precious experience to share with kids. I think the kids enjoyed the process of  making the muffins more than eating them.

What do YOU cook with your kids?
